I am assuming you are not an experienced LabVIEW Developer. The Good News is that a good Developer would know how to search the Web for LabVIEW PLC and discover that there are APIs that can facilitate using LabVIEW to implement a Virtual Instrument for use with PLCs, and perhaps answer the question "What do I need to consider in a PLC to ensure it "plays well" with LabVIEW". They would also know that LabVIEW Vision (an add-on package) can do a number of tasks, but it is not particularly suitable for programming a Coffee Maker.
I've programmed a PLC using "Ladder Logic" (an older system that didn't have LabVIEW "Hooks"), and have used LabVIEW Vision for a number of tasks. Neither is a trivial undertaking -- you should at least have several years of LabVIEW Experience and be capable of passing the CLD exam before considering doing it yourself.
