How do you set Options>Palette View>Advanced in LV8.5
It looks like the default is Express which is worthless.

Open the palette and pin it down.
Then click the View button at the top and choose Change Visible Categories.

Cool.  Is there any way to get the sub menus to pop up by simply mousing over them like in LV7.1?

Of course !
Don't leave the palette opened. Close it, then access it with a right-click

Is there any way to get the functions pallete to display all of the options like Advanced used to allow you to do?

Not sure.
Since we went to LV 8.x, there has been a lot of discussions about palette customization. A number of experienced programmers complained about the loss of time while searching new palettes. Me too. Well, after a while, I found that re-learning the palette disposition was not so difficult, and I forgot about customization. Much better when you have to work on different computers and a each update. 😉
