We shouldn't upgrade to LabVIEW 2025 if we're releasing on MacOS right?

LabVIEW 2025 is released only for Community edition on MacOS.   Which I believe does not allow for commercial use?  Perhaps not even compiling to exe?    So we should keep waiting until LV 2025 professional edition exists on MacOS?

I believe your understanding is correct, except I doubt you'll see 2025 pro: https://forums.ni.com/t5/LabVIEW/Commercial-use-of-LabVIEW-2025-Q3-on-MacOS/m-p/4447477#M1313107

I would suggest replying there to let NI know there is interest.

Technically it should not be a problem if you own a current LabVIEW license that covers LabVIEW for Windows 2025Q3. Legally however you are operating in grey area.

A LabVIEW license currently (since ca 2020 or so) lets you use LabVIEW for Linux or Windows (and before the Mac version was discontinued also there). You do not need to buy a different license anymore if you want to switch platforms.

I would contact NI and let them know. It should be a fairly easy thing for them to tell you that they are ok with someone using LabVIEW 2025Q3 on the Mac if they own a valid commercial license of LabVIEW 2025Q3.

And yes, follow the link provided by tst and voice your interest in an official commercial use of LabVIEW on the Mac.
