Can anyone point me to example VIs or give me tips to using the
deconvolution function to deconvolve two waveform arrays to produce a
response function. NI provides no examples on the website or in
LabVIEW.

The 'deconvolution.vi' computes the X input signal when the X * Y and Y signals are given. I have attached a small, simple example that shows this.
The LabVIEW 6.1 help file has a lot of good information regarding convolution/deconvolution.
