I thought custom templates are created in Word and Excel, not LabVIEW. The toolkit just uses whatever template you provide it. So it seems that your question has more to do with Word/Excel, rather than LabVIEW.

If you are asking what the functions do, try double clicking one in the block diagram.

For example, place 'New Report' in your block diagram. Then try and follow what that sub-VI is doing.
If it uses sub-VI's within it, click those too.

That should help you understand programmatically what is going on.
