What do you mean by "any given input". Sample and hold circuits are usually associated with a DAQ board. Do you need help in trying to figure out how to use NI-DAQ or DAQmx in LabVIEW?

For help in general data acquisition, I would suggest you check the shipping examples. Go to Help>find Examples. On the Browse tab, expand Hardware Input and Output>DAQmx>Analaog Measurements. If you have some sort of specific question, please try to provide some details on exactly what you're trying to accomplisth and where you are having problems.

If Dennis has already answered your question, than you can disregard this message. I got the sense that your question wasn't about the "sample-and-hold" circuitry built into DAQ cards capable of simultaneous sampling, but actually was a software question about tracking and holding peak (or maximum) values that are coming in through an analog input. If this is the case, please provide a little more information about your program, and I'm sure we can help you out.
