The only data socket control that I see is the Datasocket Refnum (reference control), which is located in the refnum palette.
I think all other functions are found in the block diagram palette.

If you go to this tutorial and look at the "front panel data socket connections" section you will see what I mean. It is (was) in the context menu; now it is gone on my machine. I don't know what I did (if anything).

Any hints are welcome, thanks from an amateur. More questions to follow.

I see what you are talking about. I don't see that right click menu option in LV 8.2 either. I suspect that the referenced link which has a publish date of 2/1/06 was created for LV 7.1. Some of those other dialog boxes have a different look to them as well compared to what you see in LV 8 and above.
I suspect going through right click properties like in Dennis' message will get the job done. I just think the link is for an older version of LabVIEW.

It was there in 8.0. I have installed (possibly since the last time I used front panel DSC) the 8.0.1 maintenance service pack and the openG libraries. Maybe the service pack killed that context menu item. For anyone interested I did find a package called frontpaneldsconfigurator (.zip) which seems to work.
I'm not entirely sure I even want to be barking up this tree, but I am trying to learn all this stuff and it is filling up my head really fast ....

I agree with Dennis.. I'm running LV8.2 and it is now in a Tab on the properties page.
