unfortunately not. Since the development is done under Windows and LabWindows/CVI requires activation under windows, and the actual build and final debug is under Linux (through cvicc), then an evaluation version would have to be of the compiler, but you'd already know what you were developing under the initial Windows development so there's no need for an evaluation version for Linux just for the compiler.
Your best option for a demonstration would be to talk to your local field based engineer who could then arrange to come in and show it to you and discuss any fine details you might be interested in.
