Does anyone know how to control a stepper motor using LabVIEW and an Automation Direct STP-DRV-6575 that doesn't have a serial port connection?

This is a simple step and direction input drive. You will need a motion controller to control it.

Can I create a virtual motion controller with LabVIEW?

What do you mean with a Virtual Motion Controller? You will need an actual card to send the step and direction signals to the drive itself.
In what concerns a virtual controller, you can create a virtual motion controller in the Measurement and Automation Explorer (MAX) which will allow you to develop your code without the card, but it won't allow you to actually control your drive.
