I need millisecond accuracy. Would streaming data to buffer or disk, then post processing the data to search for events be a feasible method?

Sure. Streaming data at 1000 samples per second is feasible, and really, it's not that much data. You could easily do this for a few minutes.
We routinely scan at 20000 or so in that time frame.
