DAQ Hardware for Thermocouple and Pressure Transducer

I am working on a test setup and would like to measure temperature and pressure.  I am planning to use the following thermocouple and pressure transducer:

The hardware depends on many factors like sample rate, range and many others. But in this case an option could be these devices.
