Latching and nonlatching DAQCards

What makes a basic difference between latching DAQCards (6062E, 6024E for example) and nonlatching DAQCards (AI-16E-4, AI-16XE-50 for example)?

The only difference is the cabling - it has nothing to do with the functionality of the board. Newer boards like the 6062E, 6024E, and 6036E have screw terminals for the cable so that it will remain securely attached. Older boards did not have the screw terminals and the cables were easily removed and thus signals disconnected. Have a great day!
