I am looking to create a PCB to plug directly into the screw terminals of a USB-6001 DAQ, so that I can interface between my needed cables and the DAQ more efficiently. There is very minimal dimensioning information on these terminals available in the specifications doc, and no information about if there are parts available that would mate with one of these terminals. Does a part like that exist, or at least a more detailed diagram of the overall unit and the terminals themselves?

From USB-6001/6002/6003 User Guide page 8.
You can purchase USB-600x Accessories (PN: 782703-01) which contains four additional screw-terminal connectors and a screwdriver.

Is there any drawing available for this? The available dimension information here https://www.ni.com/docs/en-US/bundle/usb-6001-specs/resource/374369a.pdf is very minimal and does not make it clear how the pins would need to be aligned for this.

Typically, NI uses Phoenix contact parts. If you spend some time, you will be able to find the exact ones NI used for USB-6001, and you can use the drawings from the manufacturer itself.
