I've added headers to my multisim layout so that when I transfer the circuit to utilboard the connectors they will be there. I want to simulate the circuit first in multisim, though. I can create a matching header with appropriate signals on its pins but I can't seem to find a way to match the pins on the mating connectors.

Hey,
Headers are usually layout components (meaning they can't be simulated). If you want to test out your circuit then direct connect the sources/inputs/outputs/etc to what you want, simulate, and if you are satisfied with the result and want to move on to routing, add the connectors and transfer. Connectors are just that, "connectors", so there is no need to see if the header connects to the other header, that's up to the designer to choose and make sure parts fit together.
Kind regards,
