Here are some devices at NI store for Temperature Monitoring and control
Link: Temerature Shop

You can use this Temperature Device to connect it to PC to get temperature readings.

If you have an external sensor and it has ports like TX/RX then you can also use TTL to Rs232 converter to connect it to PC on Serial Port.

And if you are using FPGA for monitoring and control you can use SCB 68-A type DIO box if your Chasis/Device doesn't have DIO Pins.

ok, let me specify it more. I am using a switch which provides the measurements of temperature and flow in the form of voltage as output, and i need to monitor its data and control its operations.so what can i use for it.

This device   can be connected to your PC or Chassis(if you are using any), because of its analog ports you can measure temperature and voltages easily.
