Question though.. I thought I saw a mention of a $200 gift card for additional training... when / how does that come out to us?

When you registered in the morning of the LabVIEW Developer Education Day event, you should have received the $200 voucher with your packet of stuff.  If you do not have one, ask Evan Robinson or Mike Owens.  If they do not have any, I kept several from my event in Rochester, NY and I can send some to them. - Scott Rogers Sr DSM, NI in Western NY.
