Which NI DAQ devices are open drain output capable? I have looked in a few specifications and not found anything refering to Open Drain capabilities.

By open drain, are you referring to a DAQ device that has a sinking output (provides ground) instead of a sourcing output (provides potential)? Or does your question pertain to bidrectional lines?
