I agree that this looks like a licensing issue. I would suggest you contact NI Tech Support directly. Since you have legal versions of LabVIEW they will be happy to help.

I do appreciate all the input and I apologize for any confusion on the matter. I called NI in regard to this issue, they suggested a repair on the professional edition. So far this has worked for me, the watermark is gone. He said the my uninstall could have failed to remove everything.
The only downside to this was that it removed all of my serial numbers from my license manager and spalsh screen (when it loads). If any problems persist I will try to bring it up, but as long as labview works and is running (w/o watermarks) I'm happy (and so was the applications engineer).
Thanks again for everyone's input.
P.S. For the virtual machine, that was a great idea, but yeah I didn't want to spend more money on an already brand new computer that has yet to run labview :).

VirtualBox is free.
