The thermocouple amplifier board is a great idea! Is the noise level low enough to get good readings? I'd like to try this out. Thank you for the suggestions!

Firstly, I sent you the wrong link. Here is the K-type board:

It has cold junction compensation. It claims 0.25 degree resolution and 2 degree accuracy.
I like that it has the screw terminals and headers so it makes things that much easier to set up. . .
