Is it possible to create a Labview exe. to log data from an AllenBradley PLC?

If you already have an OPC server you can try http://zone.ni.com/devzone/cda/tut/p/id/3978.

If not I would suggest you try and use NI OPC server. ftp://ftp.ni.com/support/niopcservers/NI_OPC_Servers.exe. The evaluation allows you to use the server for two hours continuously.
