Does anyone know if I can easily (and if so, how?) convert a 16bit image to RGB format (or vise versa) without re-opening it?

Dan,

I believe you are looking for "IMAQ Cast Image" under Image Management, which will convert from one image format to another. The help information should be enough to get you on your way.
