You can use the PCI-MIO-16E-1 Data Acquisition Board to read your sensors. There are a variety of options for how to connect those signals to the board. First, you will need the correct cable (you didn't specify what cable you had), like the SH6868. Next, you have several options that are dependent on your sensors and how accurate you want your reading to be. If you need signal conditioning (i.e. your sensors produce small voltages and might be susceptible to noise) then you might want to consider an SCXI or an SCC setup (linked below). If signal conditioning is not necessary, you might want to choose an SCB68 connector block. That should take care of the hardware side. As for Software, LabVIEW is the recommended (and best!) platform for Data Acquisition with our hardware. With that, you should be all set!
