I am using a Labjack DAQ to obtain an analog signal. All I get is a voltage signal. Is there anyway to convert this to a "time signal in" so that I can use other Labview vi's (such as "Extract Single Tone Information.vi") to do signal analysis?

I have not worked with Labjack DAQ hardware but I did visit their web-site some time ago.
First check with them about this question. What you need to find out is how determinsitic are the readings.
Without equally spaced (in time) samples, the extract single tone VI will not be able to help.
