Hi,
There are probably thousand of enclosures on the market you can use. One possible solution is to use a CA-1000 enclosure from NI. You should be able to insert the 6211 into the CA-1000. I've never done this, so please check the size of the 6211 and CA-1000 before you buy it!

You may want to consider the USB-6000 Series Prototyping Accessory:

It is basically a plastic enclosure that holds a 16-position combicon connector. The picture you see shows the top piece off so you can see inside. The accessory kit also includes the little prototyping board you see pictured in case you want to add any circuitry to it.
On the left side there is strain relief for all of your cables coming out of the device.
