My company is taping out a new bluetooth device soon. I'm thinking of using RFmx for bluetooth (2.5GHz). What PXI hardware should I purchase?

It is best to reach out to NI Sales; they will allocate an Engineer to help you choose the right instrument, given these RF instruments are quite expensive.

The problem with not going with NI Sales is that if you made a wrong choice, you wasted a hell a lot of money on HW that you don't need.
Alternatively, you can work with NI Alliance Partners who can scope our your requirements and recommend the HW that you need and even do the development work for you.
