From the manual, it looks like this accerlerometer returns it's values in terms of duty cycle. The manual says you can either use a counter or if you low-pass filter the output, you could use an A/D converter.
So I guess given those two options you could either use one of the counter/timer boards (NI 6601/6602). Or you could use an which could support the analog method. (Actually, the E Series boards have two counters on them so you could use the counter method there too.)

Also, be sure to look through the code library for sample programs. For the counter method, you'll want to look for "buffered semi-period" measurement. That would even be a shipping example if you have LabVIEW.
