How can I do fault injection using Vector's CANoe application? CANoe supports devices that use the DAQmx driver, so if there is something that uses the DAQmx driver that could do that it would be nice because I also do need to do some data acquisition and the fewer pieces of equipment required the better.

Take a look at the PXI-2510 Fault Insertion Module, which is supported in the DAQmx driver.

Do you have any USB devices? I would rather not tie up a PXI chassis with something that is not deterministic because CANoe runs on Windows.
