but how to edit the top "water"?

Hard to say without the actual VI.  Most likely, it is coming from the owning library file.

That depends on where you saved it.  It will have a lvlib extension.

That header is actually coming from an Icon Template that somebody made and applied to all of the VIs.  Since you do not have that template, it is kind of hard to edit it.  If you really want to get rid of it, apply a different template and use the Text Tool to apply whatever header you want.
