The DAT files created by these VIs are not written in DIAdem format. DAT is not a standardized file extension, that means it can contain pretty much anything.
DIAdem DAT datasets always need at least 2 files. One is called DAT and is the headerfile (information about the data in ASCII notation), the other file may have different extensions (r64, asc, w8,...) It contains the rawdata.
If you want to create DIAdem files with LabVIEW I recommend to use the LabVIEW DIAdem Connectivity VIs. They can be downloaded for free:

The installer comes with a lot of examples to demonstarate the functionality.
